CARAMELIZED FIG AND PROSCIUTTO SALAD

SERVES 2

PREP TIME: 20 MINUTES / FINISH TIME: 5 MINUTES / TOTAL TIME: 25 MINUTES

You can never go wrong with sweet and salty. The salt brings out the sweetness of ingredients while, simultaneously, the sweetness balances the astringency of the salt. It’s yin and yang at the most basic level. I can’t get enough of fresh figs when they’re in season. Figs, prosciutto, goat cheese, and fresh mint is a divine, satisfying combination that will please and impress.

4 cups baby arugula B

½ cup packed fresh mint leaves, cut into thin strips T

¼ cup Date-Balsamic Vinaigrette

8 to 10 fresh figs (about 1 cup) V

2 tablespoons unsalted butter

3 teaspoons sugar, divided

6 thin slices prosciutto (about 2 ounces) P

⅓ cup crumbled goat cheese (optional) B

Salt

Freshly ground black pepper

1.Place the arugula and mint in a large bowl. Drizzle with the vinaigrette and toss to combine.

2.Cut the figs lengthwise into thin slices.

3.In a large skillet over high heat, melt the butter. Add the fig strips in a single layer (they should not overlap) and sprinkle with 1½ teaspoons of sugar. Cook the figs without stirring them. After 5 minutes, flip them over and sprinkle with the remaining 1½ teaspoons of sugar. Continue to cook for 5 minutes, or until the figs are caramelized. Remove the skillet from the heat.

4.Divide the salad between two bowls or plates. Ribbon 3 slices of prosciutto onto each salad. Top with the caramelized figs and garnish with the goat cheese (if using). Season with salt and pepper. Serve while the figs are still warm or at room temperature.

INGREDIENT TIP: Figs are awesome. Have I mentioned how much I love fresh figs? They’re gorgeous, nutritious, and sweet. In fact, the fig tree is a symbol of abundance, fertility, and sweetness. I’m proud to be from California, where we produce 98 percent of the U.S. supply of fresh figs.

SUBSTITUTION TIP: Salami is a great replacement for prosciutto.
